History:
The Douvelle spirit has been in the family house for 15 years, the douvelle is a small moat used to make an oak barrel, thinner than the staves, this provides the final junction to finish the strapping of the keg. In this spirit of accomplishment and a final touch, the Douvelle is a centerpiece of our range to show our oenological know-how.
Blend: 100% Chardonnay.
Organoleptic style:
Floral character in attack, gives way to great complexity on empyreumatic aromas, vanilla, mocha are expressed on a full and fat finish. A complex champagne combining power and elegance.
Vinification:
Depending on the year, a selection of our best plots of Chardonnays are separated in order to continue on the one hand a wine-making process in small INOX vintages and on the other hand in our oak barrels. Following fermentation, the aging is done on fine lees with little stirring. The assembly will be the justice of the peace to determine which pieces will be married together to produce our Douvelle, composed of 40 to 60% wood vinification depending on the years.
Aging in the cellar: 50 months
Dosage: 6 g / L
Food and Champagne pairing: Gastronomic Champagne, the Douvelle will pair well with red meats in sauce, cooked pate cheeses accompanied by fig jam.
