History:

Pink Topaz has the particularity of presenting a clarity and a very particular brilliance, rare among the stones of Topaz more commonly yellow Gold; just like our Champagne wines where rosé represents only a small part of the ranges. In lithotherapy it is recognized that Pink Topaz stimulates the intellectual and the spiritual; virtues that can also be conferred on our Champagne bubbles.



Blend: 25% Chardonnay, 35% Pinot Noir, 40% Pinot Meunier, 15% Pinot noir vinification Rouge

Organoleptic style:

Each stage of vinification must lead us to the desired harmony: Fresh red fruits (raspberries, strawberries) floral aromas with sweetness (Violet) brought by Pinot Noirs; Aubépine brought by Chardonnays. The style should be tangy, flowery and slightly sweet to keep it airy.
 
Vinification:

Let's focus on red wine making. We practice destemming and crushing on our Pinots Noirs, (ie the stalk (structure of the bunch) is separated from the berries in order to avoid grassy aromas and tannic characteristics.

Aging in the cellar: 24 months minimum

Dosage: 9 g / L

Food and Champagne pairing: Its tangy character, its color naturally lead us to fruits and desserts, but these should only contain their natural sugar. Brut champagne does not necessarily go well with overly sweet desserts. A very interesting play of color with a dash of red mullet in citrus sauce.
